I had the day off of work, so I was able to do a long run in the sunshine. What a treat! I met up with my running friend, M, for a sixty minute run. Although the weather was beautiful, the roads were a bit frosty. We were careful on the frosty spots and ended up with a terrific long run! We were very pleased with our pace. We averaged an 8:58 pace for 6.69 miles. Every runner has his/her own pace goal. We were happy to meet our goal today! I also took this picture on my driveway, just because... :) When I arrived back home, I decided to treat myself to some gluten free muffins. The recipe can be found here: https://glutenfreegirl.com/2016/10/how-to-make-a-gluten-free-muffin-mix/ I thought they were good! The recipe gives you a basic muffin mix and you add in whatever ingredients you like. My additions were almond extract and poppy seeds.
Both Missee and I eat a gluten free diet. More to come on that topic for sure... Have a fabulous weekend! -Stephanie

I think I'm going to have to try those muffins. In our pre-GF days, any snow day was a muffin day. I used a yummy Krusreaz plain muffin mix and the kids would request the additions such as mandarin oranges, chocolate chips or blueberries. It's fun to make up your own combinations!
